Arnold is so tender that one wing simply fell off. The other wing pulled off, as did the drumsticks. The breast and thighs pulled away cleanly with a single cut, all getting sliced down to the right size and layered into the carrying tray with some of the juices.

There's the least bit of dryness at the deepest layers of the bird. I suspect that I need to modify my brine's salinity to account for the much denser muscle an organic bird has over store-bought. (This year, I bought my bird from a farmer who comes to the market at Hudson & Bleecker.)

The pot of juices will soon become gravy. Then we will go to the reunion and I'll re-heat the meat. The juice I've ladled in will steam the beat back to juicy yumminess, and even the dry meat will be moist.




In more dire news, there's a bill in both the House and Senate to amend the Constitution not only to ban Gay marriage, but all non-marriage partnerships whatsoever. Oppose this.

I suspect the bills will pass congress and not be ratified, but that won't stop me from advising my congresscritters that failure to vigorously oppose the bill will result in my actively seeking their replacement.
